Ingredients for Khaman

  • 1 cup Gram flour (Besan)
  • 1 cup Curd
  • 1/2 tbsp Baking soda
  • 2 tbsp Semolina
  • 1 tbsp Turmeric powder
  • 2 tbsp Oil
  • Salt to taste
  • 1/4 tbsp Sugar
  • Water, as required
For tempering:
  • 2 tbsp Oil
  • 3-4 Green chilies
  • 5-6 Curry leaves
  • 1 tbsp Coriander , cut into pieces
  • 1/2 tbsp Sugar
  • 1 tbsp Mustard seeds
  • 1 tbsp Asafoetida
  • Water as required

Recipe step by step

  • First of all we have to prepare the Dhokla batter. Add gram flour (besan), turmeric powder, oil, curd, sugar, salt and water in a bowl. Mix all the things together and keep aside for 10-15 minutes.
  • Now add baking soda to the batter.
  • Put the solution in the steamer and let it steam for 15-20 minutes.
  • After this, we have to prepare the tadka. For this, heat oil in a pan. Add mustard seeds and let them splutter. Add curry leaves, green chillies and asafoetida, sugar and water. Close the lid and turn off the gas.
  • Pour this tadka over the dhokla and garnish with fresh coriander. Khaman is ready!
